YOGURT AND PEACH CAKE

An easy and delicious dessert with a simple peach glaze.

BASE

Ingredients

  • 60 grams of Maria cookies
  • 25 grams of melted butter

Preparation

  1. The first thing we are going to do is the base of our cake. In a bowl, crush the cookies until they have the texture of sand and add the melted butter.
  2. Mix very well and put in the mold, pressing well to smooth the surface. Then we reserve in the fridge.

CAKE

Ingredients (28 cm mold)

  • 310 grams of Greek yogurt without sugar
  • 200 ml of cream
  • 100 grams of sugar
  • 4 sheets of gelatin
  • 3 peach halves in syrup

Preparation

  1. In a container with cold water, put the gelatin leaves to hydrate.
  2. In a saucepan over moderate heat add the sugar and cream, heat without boiling.
  3. Then drain the gelatin and add it to the pot, stirring until it dissolves.
  4. Immediately remove the pot from the heat and add the yogurt and incorporate until you have a homogeneous mixture.
  5. Add the chopped peach to the mixture and reserve some to add later on top.
  6. Finally we add the mixture in the mold on the biscuit base, smooth the surface and add the rest of the peach pieces being careful not to sink too much.
  7. Let stand in the fridge until set.

COVERAGE

Ingredients

  • 100 grams of peach in syrup
  • 60 ml of syrup from the peaches
  • 3 sheets of gelatin

Preparation

  1. For the coverage, we crush the peaches with the syrup.
  2. Put in a pot over heat and heat without boiling.
  3. Then add the previously hydrated gelatin and stir to dissolve well.
  4. Pour the mixture into the mold over the cake and leave in the fridge until set.
  5. Unmold the cake and decorate to taste.
