YOGURT AND PEACH CAKE
An easy and delicious dessert with a simple peach glaze.
BASE
Ingredients
- 60 grams of Maria cookies
- 25 grams of melted butter
Preparation
- The first thing we are going to do is the base of our cake. In a bowl, crush the cookies until they have the texture of sand and add the melted butter.
- Mix very well and put in the mold, pressing well to smooth the surface. Then we reserve in the fridge.
CAKE
Ingredients (28 cm mold)
- 310 grams of Greek yogurt without sugar
- 200 ml of cream
- 100 grams of sugar
- 4 sheets of gelatin
- 3 peach halves in syrup
Preparation
- In a container with cold water, put the gelatin leaves to hydrate.
- In a saucepan over moderate heat add the sugar and cream, heat without boiling.
- Then drain the gelatin and add it to the pot, stirring until it dissolves.
- Immediately remove the pot from the heat and add the yogurt and incorporate until you have a homogeneous mixture.
- Add the chopped peach to the mixture and reserve some to add later on top.
- Finally we add the mixture in the mold on the biscuit base, smooth the surface and add the rest of the peach pieces being careful not to sink too much.
- Let stand in the fridge until set.
COVERAGE
Ingredients
- 100 grams of peach in syrup
- 60 ml of syrup from the peaches
- 3 sheets of gelatin
Preparation
- For the coverage, we crush the peaches with the syrup.
- Put in a pot over heat and heat without boiling.
- Then add the previously hydrated gelatin and stir to dissolve well.
- Pour the mixture into the mold over the cake and leave in the fridge until set.
- Unmold the cake and decorate to taste.
