VEGETARIAN QUESADILLAS
Ingredients
- 1 avocado
- 3 spring onions
- 4 wheat pancakes
- 2 red bell peppers
- 1 tablespoon chili powder
- 150 grams of canned corn
- 200 grams of grated cheddar cheese
- 2 tablespoons chopped fresh coriander
Preparation
- Start by cutting the red peppers into small cubes
- Peel and chop the onions
- Then remove the skin and pit of the avocado. cut it into pieces
- Reserve all these ingredients
- Now take the wheat pancakes and spread half of the grated cheddar cheese on half of the surface of each pancake.
- On top of this cheese, add the red pepper, the spring onion, the avocado, the corn kernels previously drained from their water and half the chopped cilantro
- Finish filling the vegetarian quesadillas with the rest of the cheddar cheese
- Then fold the wheat pancake in half and place it on a frying pan or griddle over high heat.
- You are going to let cook for 5 minutes on each side until the cheese begins to melt
- Lastly, cut the quesadillas in half and sprinkle some chili powder on them.
