VEGETARIAN QUESADILLAS

Ingredients

  • 1 avocado
  • 3 spring onions
  • 4 wheat pancakes
  • 2 red bell peppers
  • 1 tablespoon chili powder
  • 150 grams of canned corn
  • 200 grams of grated cheddar cheese
  • 2 tablespoons chopped fresh coriander

Preparation

  1. Start by cutting the red peppers into small cubes
  2. Peel and chop the onions
  3. Then remove the skin and pit of the avocado. cut it into pieces
  4. Reserve all these ingredients
  5. Now take the wheat pancakes and spread half of the grated cheddar cheese on half of the surface of each pancake.
  6. On top of this cheese, add the red pepper, the spring onion, the avocado, the corn kernels previously drained from their water and half the chopped cilantro
  7. Finish filling the vegetarian quesadillas with the rest of the cheddar cheese
  8. Then fold the wheat pancake in half and place it on a frying pan or griddle over high heat.
  9. You are going to let cook for 5 minutes on each side until the cheese begins to melt
  10. Lastly, cut the quesadillas in half and sprinkle some chili powder on them.
