SWEET AND SOUR VEGETABLES

Ingredients

  • Oil
  • Salt and pepper
  • ¼ cup of water
  • 250 grams of green beans
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 3 chiles de arbol (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 cup of cauliflower in florets
  • 1 cup of broccoli in florets
  • 200 grams of kale (chopped)
  • 1 cup of pineapple jam
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 250 grams of chickpeas (cooked)
  • 2 centimeters of ginger (grated)
  • 250 grams of peas (cooked)
  • 8 pieces of cambray onion (in half)
  • 4 tablespoons peanut or sesame oil

Preparation

  1. Start by preparing the sauce, to do this heat the jam in a saucepan along with the water
  2. Once it is well integrated, add the grated ginger, the soy sauce and the chiles de arbol
  3. Then season and boil for 5 minutes
  4. Now in a heavy-bottomed pan, heat the oil for 10 minutes.
  5. Then add the cauliflower and sauté for 1 minute
  6. Add the broccoli, peppers, green beans, peas, onion and chickpeas
  7. Sauté everything for 3 minutes and finally add the kale
  8. Now add the pineapple sauce and season
  9. Cook for 10 minutes to finish cooking the vegetables. Serve hot.
