LENTIL SOUP WITH CHORIZO

Ingredients

  • 6 cups of water
  • 2 tablespoons of salt
  • 1/4 onions (for the caldillo)
  • 1/4 cups onion (chopped)
  • 1 teaspoon garlic (minced)
  • Half a cup of chorizo (sliced)
  • 3 tomatoes (in quarters - for the caldillo)
  • 5 cups of lentils (washed and soaked)
  • 1/3 cups of fresh coriander (for the caldillo)
  • Banana (to taste - in slices to decorate)

Preparation

  1. Start by blending the tomato, onion, cilantro, and garlic
  2. Now sauté the onion, garlic and chorizo in a pan, but reserve a few slices to decorate
  3. Then you take to cook the lentils with the water, the tomato sauce, the chorizo and the salt
  4. Cover the pot with the lid and cook for 30 minutes until the lentils are soft.
  5. Check and correct the seasoning if necessary
  6. Finally you serve the hot soup with the slices of banana and the chorizo that you reserved.
