LENTIL SOUP WITH CHORIZO
Ingredients
- 6 cups of water
- 2 tablespoons of salt
- 1/4 onions (for the caldillo)
- 1/4 cups onion (chopped)
- 1 teaspoon garlic (minced)
- Half a cup of chorizo (sliced)
- 3 tomatoes (in quarters - for the caldillo)
- 5 cups of lentils (washed and soaked)
- 1/3 cups of fresh coriander (for the caldillo)
- Banana (to taste - in slices to decorate)
Preparation
- Start by blending the tomato, onion, cilantro, and garlic
- Now sauté the onion, garlic and chorizo in a pan, but reserve a few slices to decorate
- Then you take to cook the lentils with the water, the tomato sauce, the chorizo and the salt
- Cover the pot with the lid and cook for 30 minutes until the lentils are soft.
- Check and correct the seasoning if necessary
- Finally you serve the hot soup with the slices of banana and the chorizo that you reserved.
