GREEN BEANS SALAD

Ingredients

  • Salt
  • 2 tomatoes
  • 1 fresh spring onion
  • 4 basil leaves
  • 8 quail eggs
  • Canned tuna loins
  • 50 grams of lemon juice
  • 500 grams of green beans
  • 1 tablespoon extra virgin olive oil

Preparation

  1. Start by washing the green beans very well, remove the strings and cut them into thin strips.
  2. Then boil the beans for about 20 minutes
  3. After this time, refresh the green beans with very cold water and after a few minutes drain them
  4. Now cook the quail eggs in boiling water for 3 minutes, cool them in cold water and then peel them. Booking
  5. Take the tomatoes and remove the skin and seeds. Then cut them into small cubes
  6. Clean and finely chop a spring onion
  7. Then place the tomato and spring onion cubes in a bowl.
  8. Also add the chopped basil and mix lightly
  9. Now in a different container add the lemon juice, oil and salt. Mix everything emulsifying the vinaigrette and add it to the bowl of vegetables, mix well
  10. To finish, place the green beans, the quail eggs, the vegetables together with the vinaigrette in a salad bowl.
  11. Serve on plates placing the tuna belly on top.
