GREEN BEANS SALAD
Ingredients
- Salt
- 2 tomatoes
- 1 fresh spring onion
- 4 basil leaves
- 8 quail eggs
- Canned tuna loins
- 50 grams of lemon juice
- 500 grams of green beans
- 1 tablespoon extra virgin olive oil
Preparation
- Start by washing the green beans very well, remove the strings and cut them into thin strips.
- Then boil the beans for about 20 minutes
- After this time, refresh the green beans with very cold water and after a few minutes drain them
- Now cook the quail eggs in boiling water for 3 minutes, cool them in cold water and then peel them. Booking
- Take the tomatoes and remove the skin and seeds. Then cut them into small cubes
- Clean and finely chop a spring onion
- Then place the tomato and spring onion cubes in a bowl.
- Also add the chopped basil and mix lightly
- Now in a different container add the lemon juice, oil and salt. Mix everything emulsifying the vinaigrette and add it to the bowl of vegetables, mix well
- To finish, place the green beans, the quail eggs, the vegetables together with the vinaigrette in a salad bowl.
- Serve on plates placing the tuna belly on top.
