YAM WOON SEN

Ingredients:

  • 1 clove garlic
  • 1 branch of chopped celery
  • Cilantro (to decorate)
  • Chopped yellow celery
  • Half red onion (julienned)
  • 1 small carrot (grated)
  • 2 tablespoons lime juice
  • 2 tablespoons of fish sauce
  • Hydrated ear mushrooms (optional)
  • 1 package of dried vermicelli noodles
  • 1 red and/or green bird's eye chili
  • 100 grams of chicken breast (chopped)
  • 1 tablespoon palm or brown sugar
  • 1 tomato (seeds removed and julienned)
  • 2 thin spring onions (julienned finely and cut on the bias)
  • 100 grams of small shrimp or raw prawns (peeled, deveined and blanched)

Preparation:

  1. The first thing we will do is prepare a vinaigrette by crushing the garlic and chili in a mortar
  2. Add the sugar, lime juice and fish sauce. NOTE: you can lighten with a little water
  3. Then hydrate the noodles according to the instructions of the brand you buy (usually 5 or 10 minutes in warm water)
  4. Drain them and make a few cuts with scissors to make them easier to handle
  5. Then distribute the noodles in the container where you are going to serve the salad
  6. Add the rest of the chopped ingredients and, finally, add the vinaigrette and mix well
  7. You can serve on banana leaves or lettuce and decorate with coriander.

Note: Modify the vinaigrette to taste and always add it at the last moment.
