TOM YUM GOONG
Ingredients:
- 4 fresh mushrooms
- 8 large shrimp
- 3 stalks of fresh lemongrass
- 4 cups of chicken broth
- 2 tablespoons lime juice
- 2 tablespoons of fish sauce
- 1 tablespoon roasted chili in oil
- 5 whole fresh Thai chilies
- 6 fresh kafir lime leaves (grated)
- 3 small slices of fresh galangal
- fresh coriander to decorate
Preparation:
- For the preparation you need to cut the galangal into small disks
- Also cut the lemongrass diagonally
- Then slice the mushrooms
- Wash the lime leaves and cut each leaf in half
- Cut Thai chillies with a knife
- Then you are going to wash and peel the prawns without removing the tail
- Now leave the broth on the fire and add the lemongrass, the galangal, the fresh chili and the lime leaves
- Bring to a boil and add the mushrooms, fish sauce, chili and lime juice. You can adjust the flavors by reducing the fish sauce and lime juice, depending on your taste.
- Now add the prawns
- And as soon as the prawns turn pink (cooked), serve them garnished with cilantro.
