TOFU CURRY

Ingredients:

  • Half red bell pepper
  • Half green bell pepper
  • half a yellow bell pepper
  • 400 grams of firm tofu
  • extra virgin olive oil
  • 1 tablespoon red curry paste
  • 1 tablespoon brown sugar
  • 1 cup of long or jasmine rice
  • 1 glass of coconut milk
  • 2 kafir lime leaves
  • 1 bunch of coriander
  • 1 spring onion
  • Salt

Preparation:

  1. The first thing you need to do is cut the peppers into squares.
  2. You are also going to cut the onion, but in julienne
  3. In a wok or deep frying pan add a splash of extra virgin olive oil, the peppers and the onion
  4. You are going to cook for 3 to 5 minutes so that they are not too soft
  5. Now you add the red curry paste and kafir lime leaves
  6. You stir and cook everything so that the curry paste dissolves and all the flavors mix well.
  7. On the other hand, you are going to cut the tofu into cubes of a roughly equal size
  8. Then you add the coconut milk and tofu to the wok
  9. Stir gently so that all the ingredients are integrated and cook over low heat for 5 to 10 minutes.
  10. Meanwhile you are going to cook some long or jasmine rice and reserve it
  11. Finally, you serve the curried tofu accompanied by the vegetables and a little rice.
