THAI RICE
Ingredients:
- 400 grams of chicken breast
- 200 grams of Thai rice
- 75 grams bean sprouts
- 30ml soy sauce
- 1 red bell pepper
- 2 carrots
- 4 tablespoons of roasted peanuts
- 16 prawns
- extra virgin olive oil
- Parsley (to decorate)
- Black pepper
- Chive
- Water
- Salt
Preparation:
- Wash the rice very well to remove excess starch
- Cook it over medium heat in a saucepan with plenty of water and a pinch of salt for 12 minutes. Drain and reserve
- Then peel the carrots and cut them into oblique slices
- Also peel and cut the pepper, but in diamonds
- Put a splash of oil in a wok or frying pan, add the carrots with the peppers, season and sauté them. reserve them
- Now cut the chicken breast into bite-size strips, add salt, pepper and briefly sauté them in the wok or pan
- Add the prawns to the pan with the chicken and sauté them. Then add the bean sprouts, season and cook everything for two minutes
- Add the poached vegetables, the rice and the soy sauce to the previous mixture
- Mix and sauté everything together
- Chop the peanuts and chives and sprinkle them over the rice
- Decorate with a leaf of parsley.
