THAI RICE

Ingredients:

  • 400 grams of chicken breast
  • 200 grams of Thai rice
  • 75 grams bean sprouts
  • 30ml soy sauce
  • 1 red bell pepper
  • 2 carrots
  • 4 tablespoons of roasted peanuts
  • 16 prawns
  • extra virgin olive oil
  • Parsley (to decorate)
  • Black pepper
  • Chive
  • Water
  • Salt

Preparation:

  1. Wash the rice very well to remove excess starch
  2. Cook it over medium heat in a saucepan with plenty of water and a pinch of salt for 12 minutes. Drain and reserve
  3. Then peel the carrots and cut them into oblique slices
  4. Also peel and cut the pepper, but in diamonds
  5. Put a splash of oil in a wok or frying pan, add the carrots with the peppers, season and sauté them. reserve them
  6. Now cut the chicken breast into bite-size strips, add salt, pepper and briefly sauté them in the wok or pan
  7. Add the prawns to the pan with the chicken and sauté them. Then add the bean sprouts, season and cook everything for two minutes
  8. Add the poached vegetables, the rice and the soy sauce to the previous mixture
  9. Mix and sauté everything together
  10. Chop the peanuts and chives and sprinkle them over the rice
  11. Decorate with a leaf of parsley.
