PRAWNS PAD THAI

Ingredients:

  • 1 egg
  • 1 chive
  • 2 cloves of garlic
  • 200 grams of shrimp (peeled)
  • 200 grams of dense tofu (extra firm)
  • 2 tablespoons vegetable oil
  • 100 grams of bean sprouts (optional)
  • 2 tablespoons peanuts (peeled) (optional)
  • 250 grams of rice pasta (medium width ribbons or tagliatelle)

PAD THAI SAUCE:

Ingredients:

  • Half a lime (or lemon) (or the juice of half a lemon)
  • 2 tablespoons brown or white sugar
  • Half a dessert spoon of ground chili or to taste
  • 1/2 tablespoon Thai fish sauce
  • 2 tablespoons of tamarind paste (or a tablespoon of vinegar)

Preparation:

  1. Start by washing the bean sprouts well and set aside.
  2. Then cut the tofu into elongated cubes, about the size of a fried leg
  3. Also finely chop the garlic and chives.
  4. Having everything ready, now you are going to toast the peanuts in a wok and over medium heat until they acquire a light brown color
  5. Then remove and reserve
  6. Then add the oil to the wok and heat over high heat.
  7. When the oil is very hot, add the garlic, chives and tofu
  8. You are going to sauté stirring with a wooden spatula until the mixture begins to color (it's only for a few seconds)
  9. Then add the drained rice paste and stir to prevent it from sticking
  10. You add the ingredients of the Pad Thai sauce described above (or the Pad Thai sauce if you have)
  11. Stir for a few seconds and push the mixture towards the edges of the wok to leave the central part free
  12. Now in the center you break the egg and make a scrambled egg by mixing it for 20 seconds
  13. Then you push all the ingredients back to the center of the wok to mix them with the egg
  14. Now try the paste and if it is too hard, you can correct it by adding a splash of water and stirring for a few more seconds. Note: the fish sauce will have added the salt to the stew, but if you think it is missing you can add salt
  15. Then you add the peeled prawns and mix
  16. Give a touch of white pepper powder and add the bean sprouts
  17. Mix everything again for 20 seconds and remove from heat
  18. When serving, sprinkle the roasted peanuts on top.
