PRAWNS PAD THAI
Ingredients:
- 1 egg
- 1 chive
- 2 cloves of garlic
- 200 grams of shrimp (peeled)
- 200 grams of dense tofu (extra firm)
- 2 tablespoons vegetable oil
- 100 grams of bean sprouts (optional)
- 2 tablespoons peanuts (peeled) (optional)
- 250 grams of rice pasta (medium width ribbons or tagliatelle)
PAD THAI SAUCE:
Ingredients:
- Half a lime (or lemon) (or the juice of half a lemon)
- 2 tablespoons brown or white sugar
- Half a dessert spoon of ground chili or to taste
- 1/2 tablespoon Thai fish sauce
- 2 tablespoons of tamarind paste (or a tablespoon of vinegar)
Preparation:
- Start by washing the bean sprouts well and set aside.
- Then cut the tofu into elongated cubes, about the size of a fried leg
- Also finely chop the garlic and chives.
- Having everything ready, now you are going to toast the peanuts in a wok and over medium heat until they acquire a light brown color
- Then remove and reserve
- Then add the oil to the wok and heat over high heat.
- When the oil is very hot, add the garlic, chives and tofu
- You are going to sauté stirring with a wooden spatula until the mixture begins to color (it's only for a few seconds)
- Then add the drained rice paste and stir to prevent it from sticking
- You add the ingredients of the Pad Thai sauce described above (or the Pad Thai sauce if you have)
- Stir for a few seconds and push the mixture towards the edges of the wok to leave the central part free
- Now in the center you break the egg and make a scrambled egg by mixing it for 20 seconds
- Then you push all the ingredients back to the center of the wok to mix them with the egg
- Now try the paste and if it is too hard, you can correct it by adding a splash of water and stirring for a few more seconds. Note: the fish sauce will have added the salt to the stew, but if you think it is missing you can add salt
- Then you add the peeled prawns and mix
- Give a touch of white pepper powder and add the bean sprouts
- Mix everything again for 20 seconds and remove from heat
- When serving, sprinkle the roasted peanuts on top.
