PAD THAI
Ingredients:
- 1 lime (or lemon)
- 2 carrots (grated)
- 2 fistfuls of peanuts
- oil of your choice
- 2 teaspoons of sugar
- chili flakes to taste
- 2 handfuls of bean sprouts
- 1 onion (cut into strips)
- 2 tomatoes (finely chopped)
- 2 tablespoons coriander (chopped)
- 250 grams of rice noodles
- 2 cloves of garlic (finely chopped)
- 2 scallions (chopped - green part only)
- 4 tablespoons soy sauce (or fish sauce)
- 250 grams of chicken breast (cooked and sliced)
Preparation:
- Start by soaking the noodles in salted water for 30 minutes or following the instructions on the package.
- On the other hand, cook the chicken and cut the vegetables
- Then in a wok with hot oil, you are going to fry the carrots, the onion and the tomatoes
- You add the garlic, the noodles and the chicken
- Stir well to combine the flavors very well.
- Add the sauce and sugar. Mix until all ingredients are well combined
- Finally you serve by adding the bean sprouts, chives, lime and chili flakes
- You can decorate with peanuts and cilantro.
