PAD KRA PAO GAI
FOR THE CHICKEN WITH BASIL:
Ingredients:
- 4 red chillies
- 7 cloves of garlic
- 2 minced shallots
- 1 teaspoon of sugar
- 3 tablespoons vegetable oil
- 2 teaspoons of fish sauce
- 4 chicken breasts (cut into small pieces)
- 2 tablespoons sweet soy sauce
- 1 bunch holy basil or Thai basil leaves, julienned
Preparation:
- Start by crushing the garlic and chiles together in the mortar
- You are going to separate the leaves from the bunch of basil and discard the stems
- Bring a wok or non-stick saucepan to high heat and add the oil.
- Once the oil is hot, add the onion and garlic
- Sauté for 15 seconds without letting it burn or dry out
- Then add the shallots and chicken
- Stir continuously for 5 minutes or until fully cooked. Note: if the chicken starts to dry out, just add a little water
- Then add the fish sauce and sweet soy sauce and continue frying for about 40 seconds
- Now, add the basil and mix very quickly
- Then put out the fire immediately. The basil should only cook for about 5 seconds; it will continue to cook with the heat of the chicken. Note: This step is important because if you cook the basil for too long, it loses some of its flavor and becomes slightly bitter in addition to burning.
FOR THE FRIED EGG:
Ingredients:
- 4 eggs
- 4 tablespoons vegetable oil
Preparation:
- In a wok or frying pan, heat the vegetable oil over medium heat.
- Once the oil is hot, break the eggs and add them to fry them
- Now as soon as the egg whites bubble, pour some hot oil over the top of the egg (don't turn the egg over)
- The whites should be toasted and the yolks should be liquid.
- Finally, serve with white rice.
