
MANGO SAUCE
Ingredients:
- 2 tablespoons fish sauce (or 1 tablespoon soy sauce plus a pinch of salt if vegetarian/vegan)
- 3 cloves of garlic (minced)
- 2 tablespoons Thai sweet chili sauce
- 2 tablespoons brown sugar
- 2 ripe mangoes
- 1 tablespoon lime juice
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground dried chili
- 1/4 cup thickened coconut milk
Preparation:
- Peel and put mango pieces in a food processor
- Then add all the other ingredients
- Process well, but avoid over-processing so that we don't have too much liquid left.
- If you prefer mango chunks in your sauce, simply pulse to create the sauce until you have the desired texture
- Give it a try as depending on the sweetness of the mango you may need to add a bit more sugar
- Add more fish sauce for more flavor, more chili for more spice, or more lime juice for a tart flavor.
