MANGO SAUCE

Ingredients:

  • 2 tablespoons fish sauce (or 1 tablespoon soy sauce plus a pinch of salt if vegetarian/vegan)
  • 3 cloves of garlic (minced)
  • 2 tablespoons Thai sweet chili sauce
  • 2 tablespoons brown sugar
  • 2 ripe mangoes
  • 1 tablespoon lime juice
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground dried chili
  • 1/4 cup thickened coconut milk

Preparation:

  1. Peel and put mango pieces in a food processor
  2. Then add all the other ingredients
  3. Process well, but avoid over-processing so that we don't have too much liquid left.
  4. If you prefer mango chunks in your sauce, simply pulse to create the sauce until you have the desired texture
  5. Give it a try as depending on the sweetness of the mango you may need to add a bit more sugar
  6. Add more fish sauce for more flavor, more chili for more spice, or more lime juice for a tart flavor.
