LAAB KAI

Ingredients:

  • 1 lime
  • 10 dried chillies
  • 2 shallots (cut)
  • half a teaspoon of salt
  • 250 grams of chicken (chopped)
  • 5 grams of coriander (chopped)
  • 5 grams chives (chopped)
  • 10 grams of mint (cut)
  • 2 tablespoons of fish sauce (Nam-pla)
  • 2 tablespoons raw sticky rice (or long rice)

Preparation:

  1. Start by toasting the glutinous rice and dried chillies Note: if you don't like it so spicy, first remove the seeds from inside.
  2. Once the rice and chilis are well toasted and release all their aroma, remove from the heat and let cool.
  3. Then with the help of a mortar, you grind them separately and reserve
  4. Now, in a wok or frying pan, heat a little vegetable oil.
  5. Add the chicken there and stir separating into small pieces
  6. When it is well separated, add a splash of water, salt, and stir well. remove from fire
  7. Then season to taste
  8. You add the fish sauce, the lime juice, a little chili and the toasted and crushed rice
  9. You also add the mint, shallots, coriander and chives
  10. Mix very well and voila!
