SOUP:

Ingredients:

  • 2 onions
  • 2 liters of water
  • 1 head of garlic
  • 2 cinnamon sticks
  • 10 coriander stems
  • 3 star anise
  • 1 kilogram of pork ribs
  • A little dark soy sauce
  • 1 tablespoon brown sugar
  • 3 tablespoons light soy sauce
  • Half tablespoon of Chinese 5 spices
  • Half a tablespoon of white peppercorns
  • Half a tablespoon of salt

FRIED GARLIC:

Ingredients:

  • Vegetable oil
  • 1 head of garlic (small)

Ingredients:

  • 200 grams of bean sprouts
  • 200 grams of rice noodles
  • A little coriander and chives

Preparation:

  1. For the preparation, the first thing you need to do is soak the rice noodles
  2. Then you are going to separate the pork ribs one by one
  3. Cut the onion in half
  4. Separate the cilantro stems from the leaves
  5. In a mortar, crush the white peppercorns.
  6. On the other hand, in a pot with boiling water, cook the pork ribs for 5 minutes. Then take them out and clean them well in plenty of water.
  7. Now, to make the soup you leave the ribs in a pot
  8. Add the onion, garlic, coriander stems, white pepper, cinnamon stick and star anise
  9. Then add 2 liters of water and cook over high heat until it starts to boil
  10. Lower the heat to low and remove the impurities
  11. Then you add the salt, sugar, light soy sauce and dark soy sauce
  12. Stir well and cook for 2 hours
  13. Once the soup is ready in a saucepan with boiling water, cook the rice noodles for 1 minute and place them in a bowl
  14. Immediately in the same water you blanch the bean sprouts and leave them in the same bowl
  15. Finally, you put the pork ribs, the fried garlic, a little white pepper and a little coriander and chopped chives and we add the soup just before serving.
