KHAO TOM MAD

Ingredients:

  • 2 bananas
  • half a teaspoon of salt
  • 400 milliliters of coconut milk
  • 250 grams of sticky rice
  • 100 grams of cane sugar
  • Kitchen string or toothpicks
  • 30 small black beans (optional)
  • 1 package of banana leaves or parchment paper

Preparation:

**One day before:

  1. For the preparation you need to prepare the sticky rice a day before. So, wash it and rinse it until the water runs clear
  2. Then let it soak overnight in a large container
  3. Note: make sure there is at least 5 centimeters of water on top of the rice, as it will swell. If you are going to use black beans they should also be soaked overnight.

**The next day:

  1. You need to drain the rice and reserve
  2. Also drain the black beans and boil until soft, about 15 minutes.
  3. Now remove the skin of the bananas and cut them into slices of approximately 7 to 8 centimeters in order to obtain 10 pieces
  4. On the other hand, in a pan, you are going to heat the coconut milk, sugar and salt over medium heat. stir well
  5. Then add and mix the sticky rice
  6. You are going to cook for 10 minutes and when the rice has absorbed the coconut milk, turn off the heat and let cool.
  7. Then heat the water from the steamer Note: This recipe calls for a steamer or other container for steaming.
  8. Wash the banana leaves and cut them into 10-inch squares.
  9. Now, on the dull side of the banana leaf, you are going to add a good tablespoon of sticky rice, plus 3 black beans and a piece of banana
  10. Then you are going to close the sheet (like a roll) crossing the sides (left, right, top and bottom). Secure it with kitchen string or toothpicks
  11. Place the rolls in the steamer basket and cook over low heat for 1 hour
  12. Let cool, can be eaten hot or cold.
