KHAO PAD SAPAROD
Ingredients:
- 2 eggs
- 10 prawns
- Salt and pepper
- Vegetable oil
- 1 teaspoon of sugar
- 1 tablespoon soy sauce
- 1 teaspoon curry powder
- 1 tablespoon fish sauce
- Half pineapple (diced)
- Cashews (Cashnuts)
- 1 small onion (finely chopped)
- 1 medium tomato (cut into cubes)
- 2 scallions (chopped - green part only)
- Half a teaspoon of powdered coriander root
- 3 cups jasmine rice (prepared the day before and refrigerated)
Preparation:
- Start by heating the vegetable oil in a wok or large skillet.
- There you are going to fry the onion and fry the prawns on both sides
- When they are ready, remove them from the wok and reserve
- Now you are going to fry the eggs by breaking them into small pieces
- You add the curry, coriander root, sugar, soy sauce, fish sauce, tomato, pineapple and rice
- You let all the ingredients fry moving them constantly so that they integrate well
- Also season with salt and pepper to taste.
- Add the prawns and mix
- To serve, you can do it in a pineapple cut lengthwise and without the pulp (remove it with a spoon) or simply on a plate
- You can accompany with chives and cashews.
