GREEN MANGO SALAD

DRESSING:

Ingredients:

  • 60 milliliters fermented fish sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 2 Thai chilies
  • juice of one lime

Preparation:

  1. To do this, remove the tail from the chiles and cut them in half
  2. If you don't want it very spicy, also remove the seeds and put them in an American glass add the garlic, brown sugar and lime juice
  3. Then add the fermented fish sauce and the two tablespoons of olive oil
  4. Shred and reserve

SALAD:

Ingredients:

  • 120 grams of roasted and chopped peanuts
  • 1 bunch of spinach
  • 1 bunch of chives
  • 1 bunch of coriander
  • 1 bunch of mint
  • 2 green mangoes
  • 1 piece of pumpkin
  • 2 tablespoons toasted sesame seeds
  • 2 shallots
  • Salt

Preparation:

  1. Peel and cut the mangoes in fine julienne
  2. Also julienne the squash, shallots and spinach leaves
  3. Add everything in a bowl
  4. Now add some of the peanuts and a few tablespoons of dressing. mix well
  5. Break some coriander and mint leaves with your hands and add them
  6. Then cut the chives into sticks and add a few
  7. Mix and season to taste
  8. When serving sprinkle more peanuts and sesame seeds
  9. Garnish with some chives sticks, a few mint leaves and coriander.
