GREEN CHICKEN CURRY (Very Spicy)

Ingredients:

  • 1 kafir lime
  • Salt to taste
  • 2 cloves of garlic
  • Half red bell pepper
  • Half a spring onion
  • 5 kafir lime leaves
  • 2 chicken breasts
  • 1 red chili (fresh or dried)
  • 1 bunch of fresh basil
  • 10 grams of fresh ginger
  • 500 milliliters of coconut milk
  • 1 tablespoon sunflower oil
  • 1 teaspoon brown sugar
  • 2 teaspoons green curry paste

Preparation:

  1. For the preparation, the first thing you need to do is chop the chicken breasts into regular cubes.
  2. In a wok or deep pan you are going to heat 1 tablespoon of sunflower oil
  3. Once the oil is hot, you are going to add the pieces of breast to seal them
  4. On the other hand, it is going to cut the onion and the red pepper in julienne
  5. You also cut the garlic cloves into slices
  6. Once the breasts are sealed, add the onion, paprika and garlic
  7. Grate the ginger and add 1 teaspoon and salt to taste
  8. You also add the kafir lime leaves and chili
  9. Add 2 teaspoons of green curry paste or to taste according to the level of spiciness you prefer
  10. Now to balance the spiciness of the curry paste you are going to add 1 teaspoon of brown sugar
  11. You cook all the ingredients so that the chicken takes on all the flavors of the ingredients
  12. Then add the coconut milk and cook over low heat for 10 minutes.
