FRUIT SALAD

DRESSING:

Ingredients:

  • 1/4 cup coconut milk
  • 2 to 3 tablespoons of sugar to taste
  • 1 tablespoon freshly squeezed lime juice

Preparation:

  1. To prepare the dressing you need to mix the coconut milk, lime juice and sugar until the sugar dissolves.

SALAD:

Ingredients:

  • 2 cups of strawberries
  • 1 sliced banana
  • 1 carambola (peeled and sliced)
  • 1 cup fresh or canned pineapple cubes
  • 1 cup mango peeled and cubed (or frozen)
  • 1 cup lychee fruit (if using canned, discard liquid)

Preparation:

  1. In a bowl you are going to place all the fresh fruit
  2. Add the dressing over the fruit and mix well
  3. Then pour the fruit salad into a serving bowl or carved pineapple
  4. Decorate just before serving with a slice of carambola.

Grades:

  • Refrigerate if not serving immediately.
  • To prevent carambola from turning brown after you cut it, simply sprinkle it with a little fresh lemon or lime juice.
