FRIED CHINESE NOODLES

Ingredients

  • Salt
  • 2 eggs
  • 1 carrot
  • half zucchini
  • 1 Italian green pepper
  • 200 grams of tagliatelle
  • Seed or sunflower oil
  • 200 grams of chicken breast
  • 16 fresh prawns, uncooked
  • 1 tablespoon oyster sauce
  • 200 grams of beef fillets (thin)
  • 3 tablespoons of soy sauce
  • A little sesame oil (optional)
  • To marinate the meat:
  • 1 tablespoon oyster sauce
  • 2 tablespoons of soy sauce
  • 2 tablespoons Chinese wine or dry sherry
  • 2 dessert spoons of cornstarch or fine cornmeal

Preparation

To marinate the meats:
  1. Start by cutting the chicken and beef into bite-size pieces.
  2. Now in a bowl or container add the chicken and beef along with the marinade ingredients: soy sauce, oyster sauce, wine and cornstarch
  3. You are going to mix everything very well
  4. Then cover with plastic wrap and let rest in the refrigerator for 20 minutes.
To cook the noodles:
  1. To cook the noodles, you need to add plenty of water to a pot and leave over high heat.
  2. When the water boils, add a teaspoon (dessert) of salt and the noodles
  3. Let cook for the time indicated on the package, more or less 10 (may vary).
  4. Once ready you are going to drain them to prevent them from sticking to each other
  5. After a few minutes and when they are well drained, place them on a plate and add a little sesame or seed oil and mix
For the preparation in general:
  1. Now you are going to prepare the rest of the ingredients since it is important to have them cut and ready to cook because then everything goes very quickly
  2. Take the prawns (previously thawed) and peel them, removing the heads by pulling them and peeling the body and tail with your hands. Also make a cut through the outermost area and remove the intestine that will have brown remains
  3. Then wash, peel the carrot and cut it julienne
  4. Also take the zucchini, wash it and cut it in julienne
  5. With the green pepper do the same procedure as with the zucchini
  6. Ready the vegetables now take the eggs and beat them a little in a bowl
  7. In the wok or pan that you are going to use, add a little seed or sunflower oil and leave on high heat.
  8. Once the oil is hot, add the beaten eggs and cook for just 1 minute, stirring them.
  9. Separated into pieces and reserve them in a separate plate
  10. Now add a little more oil and cook the chicken and beef there for about 3-4 minutes, until they are a little brown. Note: do not move the meat much in the wok, just wait for it to brown and then stir a little or turn the pieces over and wait a little longer for them to brown on both sides
  11. Ready the meats, add the prawns and cook everything together for 2 more minutes
  12. Reserve the meat and prawns together with the eggs
  13. Again pour a little oil and sauté the carrot, zucchini and green pepper for about 3 minutes
  14. Then you add the noodles along with the soy sauce and oyster sauce. remove
  15. Let cook for 2 more minutes.
  16. Finally, add the prawns, beef, chicken, egg and a little sesame oil
  17. Finish cooking everything together for 2 or 3 minutes or until it is to your liking.
