CAESAR SALAD
It is a very healthy summer recipe that combines the delicious flavor of chicken, cheese and an incomparable touch of Cesar sauce.
SAUCE
Ingredients
- 200 milliliters olive oil
- 1 egg
- Juice of 1 lemon
- 1 teaspoon mustard
- 1 teaspoon Worcester sauce
- 40 grams of canned anchovies
- 150 grams of Parmesan cheese
- 1 clove garlic
Preparation
- Add the egg, 200 ml of olive oil and the juice of 1/2 lemon to the blender.
- Beat and after 10 seconds, raise the mixer a little, without stopping beating. We leave 5 more seconds and we can raise and lower the mixer continuously, always without stopping beating and we will have our mayonnaise made, the base of the Caesar sauce. Since more ingredients are going to be added, it is important that there is something liquid left.
- Then we add to our mayonnaise 50 grams of Parmesan cheese, the juice of 1/2 lemon, a clove of garlic, the mustard, the Worcester sauce, the anchovies drained of their oil and beat again.
- If it is very dry you can add a little milk until there is a sauce with a certain body but, throwing liquid
SALAD
Ingredients
- 2 chicken breasts
- 150 grams of Parmesan cheese
- 2 romaine lettuces
- cherry tomatoes (optional)
- 100 grams of croutons (toasted bread cut into cubes)
- arugula (optional)
- Salt and pepper
Preparation
- We start by seasoning the chicken breasts with salt and pepper and cut into bite size cubes.
- In a frying pan, cook them over high heat with a little oil until they are colored on the outside and cooked inside.
- While the chicken is on fire we are going to prepare our salad.
- In a salad bowl we add 2 tablespoons of the cesar sauce and on it the lettuce cut into pieces, the cherry tomatoes, the arugula, the croutons, and 150 grams of Parmesan cheese cut into fine slices and finally we add the cooked chicken.
- We finished dressing with more caesar sauce.
- Serve immediately, because the heat of the chicken will give it a very interesting touch of warm salad.
