SAUCE:

Ingredients:

  • 1 cucumber (peeled)
  • 100 milliliters sweet or sour chili sauce

Preparation:

  1. Take the cucumber and cut it into small cubes
  2. In a medium bowl add the sweet chili sauce and the cucumber pieces
  3. Mix well and let it rest for a few minutes before serving in individual containers.

DOUGH OF THE CROQUETTES:

Ingredients:

  • 2 large eggs
  • 1 tablespoon of sugar
  • 75 grams of red curry mix
  • Vegetable oil to fry the croquettes
  • 1 tablespoon fish sauce
  • 500 grams of white fish meat without bones or skin (hake, whiting, sea bass...)

Preparation:

  1. In the grinder you are going to grind all the ingredients of the croquette dough well until you get a homogeneous mixture
  2. Then in a wok or deep frying pan over medium high heat, heat the oil.
  3. Once the oil is hot and with the help of a spoon, you start to take out the fish paste and shape it into a cookie with a thickness of between 1 and 2 centimeters
  4. You take them to the hot oil and fry about 30 seconds until golden on each side
  5. Immediately remove them with a slotted spoon to a plate with kitchen paper
  6. Finally you serve with the sauce on a plate decorated with basil.
